Fresh Apple Cake

I love this apple cake recipe I got from my sister. It was her go-to cake when she needed something for a work event or one of her children's activities. It's also great therapy for when I miss her.



1 Cup oil

2 Cups sugar

2 Eggs

2 ¼ Cups flour

1 Tsp. baking soda

1 Tsp. salt

1 Tsp. cinnamon

½ Tsp nutmeg

3 Cups apples, peeled and chopped

1 Tsp. vanilla

1 Cup of chopped nuts





1 Stick butter

1 Cup brown sugar

½ Cup evaporated milk


  1. In large mixing bowl, combine oil and sugar. Add eggs and beat well. Stir dry ingredients into mixture and mix well. Stir in apples, nuts and vanilla. Blend well. Bake in greased and floured Bundt pan at 350 degrees for 1 hour-plus; however, check the cake before removing from oven, since many ovens heat differently.

  2. While still warm, turn cake out onto a cake stand or plate. Blend icing ingredients in a saucepan. Whisk while boiling for 2 minutes. If necessary, strain hot icing so that it’s perfectly thin. While cake is still warm, brush hot icing over it with a pastry brush. Repeat action until all the icing is used, soaking into the cake. Makes a large cake and freezes well.
