There's something irresistible about the combination of cinnamon and apples. This simple recipe is an easy solution when the cravings hit.
For the Filling
4 Tbsp. almond paste
1 large apple, peeled, cored and grated
1/8 cup sugar
1 tsp. almond extract
1 tsp. cinnamon
2 Tbsp. butter
For the Crust
1 sheet frozen puff pastry, thawed
1 egg plus 1 tsp. water, beaten
sliced almonds
sugar
For the Glaze
¾ cup powdered sugar
1 tsp. almond extract
splash of cream
In a small saucepan, combine all the filing ingredients, except the almond paste. Cook over medium heat until apple is almost done. Remove from heat and set aside.
Unfold puff pastry and cut in four squares. Smear each section with a tablespoon of almond paste, avoiding the edges. Add a scoop of apple mixture, (avoid excess liquid) to each pastry and fold into a triangle. Using a fork, crimp the edges. Brush pastry with egg wash, sprinkle with almonds and a small amount of sugar. Bake at 400 degrees until puffed and golden brown.
Combine glaze ingredients in small bowl and whisk until smooth. While pastries are still hot, using a teaspoon, slowly coat them completely with the glaze. Makes 4
